I'm seriously developing a bad case of Spring Fever! It was so nice in February that I expected it to just continue to keep getting nicer. Instead it's been cold, wet and blustery. I should have known better. It is March. Well I am finally starting to recouperate from my illness and trying to get back in the swing of things. I found this wonderful recipe for Tarte Bordaloue.
I first made it according to directions and it was DIVINE. So divine it disappeared. So I decided to make another but didnt have anymore pears. So I made one with strawberries and kiwis. D said it was just a good.

Ingredients
- *4 eggs
- * 3/4 cups vegetable oil
- * 1/2 cup applesauce
- * 1 cup white sugar
- * 1 cup brown sugar
- * 1 tablespoon vanilla extract
- * 1 8 oz can crushed pineapple drained
- * 2 cups all-purpose flour
- * 2 teaspoons baking soda
- * 2 teaspoons baking powder
- * 1/2 teaspoon salt
- * 1 tablespoon ground cinnamon
- * 1/4 teaspoon nutmeg
- * 3 cups grated carrots
- * 1 cup chopped pecans
- *
- * 1/2 cup butter, softened
- * 8 ounces cream cheese, softened
- * 3 cups confectioners' sugar
- * 1 teaspoon vanilla extract
- * 1 cup chopped pecans
Directions
- 1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch pan.
- 2. In a large bowl, beat together eggs, oil, applesauce, white sugar, brown sugar, pineapple and vanilla. Mix in flour, baking soda, baking powder, salt, nutmeg and cinnamon. Stir in carrots. Fold in pecans. Pour into prepared pan.
- 3. Bake in the preheated oven for 40 to 50 minutes, or until a toothpick inserted into the center of the cake comes out clean. Let cool in pan for 10 minutes, then turn out onto a wire rack and cool completely.
- 4. To Make Frosting: In a medium bowl, combine butter, cream cheese, confectioners' sugar and 1 teaspoon vanilla. Beat until the mixture is smooth and creamy. Stir in chopped pecans. Frost the cooled cake.

Glad to hear you're on the mend! You're right about the weather..I was lulled into a false sense of security that Spring would bring some good weather by a few good days but now it's colder than it was in Feb and Jan!
